Here’s how you can prepare the following:
- 1 tbsp. refined coconut oil
- 1-1/2 cups vanilla-fudge ice cream, slightly softened
- 2 tbsps. maple syrup
- 2 tbsps. peanuts, finely chopped
- 3 oz. semisweet chocolate, finely chopped
- 4 waffle bowls
Get the waffle bowls and brush its insides with maple syrup. Do it one at a time. After that, invert it onto a microwave-safe container and cover with paper towel. Then heat it in the microwave for 30 seconds to soften and flatten the waffle. Quickly mold the waffle into a taco shell shape using your hands.
Leave it for about two minutes. Next, fill the waffles with ice cream, preferably 6 tablespoons per taco. Smooth the surface using the back of a spoon, transfer it to a plate or a baking sheet, and let it freeze for 1 hour.
For the topping, combine chocolate and oil in a smaller microwave-safe bowl. Heat it for 30 seconds in microwave until it becomes melted and smooth. Add the peanuts. Take the frozen waffle tacos and roll the ice cream side into the melted chocolate, enough to cover the ice cream. Finally, let it freeze again for 10 minutes to let the chocolate set.
Here’s a useful tip: you can put the tacos in an airtight container so it will last for at most 7 days.
