If you are looking for a unique Christmas present idea for your neighbors and friends, here’s a suggestion you will love. Though it requires time and effort, rest assured that everybody is going to love this. This sumptuous pastry from the Web site Knead to Cook is called Eggnog Bread.
Here’s what you need:
- 1/2 cup butter (at room temperature)
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1 teaspoon vanilla extract
- 1 cup white sugar
- 1 (3.4 ounces of powdered) package of instant French vanilla pudding mix
- 1 and 1/2 cups of regular eggnog (non-low-fat)
- 2 eggs
- 2 tsp spiced rum
- 2 tsp baking powder
- 2 1/4 cup all purpose flour
Before anything else, preheat the oven to 350 degrees. Then spray the muffin or loaf pan with nonstick cooking spray and flour.
In a mixer, combine the eggnog, rum, eggs, vanilla, sugar, and butter. If the butter remains lumpy, do not worry. It is just fine. In another bowl, sift the flour, baking powder, pudding mix, nutmeg, and salt. Add the dry mixture to the wet one and mix well, but make sure you do not overdo it.
If the butter still remains clumpy, it is to be expected. Eventually, as it cooks, the butter will met. However, be careful as the dough will be thicker.
Once you are through, pour the batter into the baking pan of your choice. Next, bake the mini loaves for about 30 minutes or until the toothpick comes out clean. A regular loaf pan usually takes 45 to 55 minutes to cook.
How to prepare the rum glaze:
- 1/8 tsp of ground nutmeg
- 1 cup sifted confectioners sugar
- 2 tsp eggnog
- 2 tbsp spiced rum
Simply whisk together all the ingredients and pour the mixture over the cooled eggnog bread.
You now have a present that is too beautiful to eat!
