Summer is here! That means temperatures are rising and the demand for ice cream is high! If you’re looking for a tasty, easy treat to help cool down, these ice cream pops are just for you!!!
- 1 cup roasted peanuts
- 14 chocolate peanut butter cups
- 3/4 cup hot fudge sauce
- 3/4 cup smooth peanut butter
- 1 quart vanilla ice cream
- 8 five-ounce paper cups
- 8 Popsicle sticks
To make these ice cream pops, you want the vanilla ice cream to be soft but not melted. Leave it out on the counter while you prepare the rest of the ingredients.
Chop the peanuts into decent size pieces. Not too small–you want them to be nice and crunchy in your ice pop!
Warm up the fudge and the peanut butter in separate bowls. About 15 to 20 seconds should do the trick! You dont want them to bubble. Just warm enough so they because liquidy.
Let the layering begin! Place a spoonful of peanuts at the bottom of the cups. Then add a scoop of vanilla ice cream.
Smooth the ice cream down with the spoon so it’s an even/flat layer . You’ll use this as a base to fill the rest of your cup.
Next, ADD THE FUDGE!!! AS MUCH AS YOU WANT!!
Add a nice helping of peanuts to the top of the fudge. “Go nuts!”
Then, add some more ice cream and pat all of your ingredients down with the spoon so it’s compacted nice and tight.
Next, add the peanut butter! A nice generous spoonful…
Top the peanut butter with your peanut butter cups! Again, go nuts! Add as much as needed.
Add your final layer of ice cream and smooth it out…
Add 1 last layer of peanuts on top of Vanilla and press down. Place a popsicle stick in the middle and push down until its almost at the bottom.
And now we wait! You’ll need to freeze the pops for about an hour so the ice cream hardens.
Once the pops are frozen, they’re ready to eat! Cut the cup with scissors, then carefully peel it away from the ice cream pop.
